This is a Dutch dish that my mother made often when I was growing up.<\/p>\n<p>Like most of my recipes, there are not too many \u2018real\u2019 measurements as most things are thrown together but this is pretty simple and straight forward. If you have any questions that I don\u2019t answer, feel free to ask!<\/p>\n<p>First off, the simple list of ingredients:<\/p>\n<ul>\n<li>finely chopped cooked left over turkey meat<\/li>\n<li>butter<\/li>\n<li>flour<\/li>\n<li>chicken broth<\/li>\n<li>salt<\/li>\n<li>pepper<\/li>\n<li>1 teaspoon Worcestershire sauce<\/li>\n<li>egg<\/li>\n<li>dry bread crumbs<\/li>\n<li>oil for frying<\/li>\n<\/ul>\n<p>Melt a few tablespoons of\u00a0butter in a saucepan over low heat.<\/p>\n<p>Stir in enough flour to soak up the butter and stir it until smooth.<\/p>\n<p>Gradually stir in chicken broth to make a smooth thick sauce.<\/p>\n<p>Add the cooked finely chopped turkey, and season with the salt, pepper, and\u00a0Worcestershire sauce to your own taste.<\/p>\n<p>This is what your mixture will look like:<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2043\/2174534620_51596141a5.jpg\" alt=\"\" \/><\/p>\n<p>Stir to blend well. Remove from heat, spread out in a large baking pan,\u00a0and set aside to cool to room temperature.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2287\/2173749769_18ca886b42.jpg\" alt=\"\" \/><\/p>\n<p>When the meat mixture is cooled and slightly firm, shape into\u00a0\u2019logs\u2019 3 to 4 inches long, and 1 1 \/2 inches wide.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2162\/2173758395_4f7a952458.jpg\" alt=\"\" \/><\/p>\n<p>Beat the eggs in a shallow bowl that is large enough for dipping your croquetten.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2282\/2174540772_d412e4207d.jpg\" alt=\"\" \/><\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2023\/2173754017_aef95e3e53.jpg\" alt=\"\" \/><\/p>\n<p>Place bread crumbs on a plate.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2158\/2174543630_01a35de8ca.jpg\" alt=\"\" \/><\/p>\n<p>Coat croquettes with breadcrumbs, dip in the beaten egg mixture, then roll the croquettes in the crumbs again to coat.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2343\/2174545114_efb6f4dd04.jpg\" alt=\"\" \/><\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2112\/2174549348_3e0e1c57a8.jpg\" alt=\"\" \/><\/p>\n<p>Heat oil in a deep fryer.<\/p>\n<p>When oil is hot, fry croquettes until golden brown on all sides.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2059\/2174549738_5a25d6ca67.jpg\" alt=\"\" \/><\/p>\n<p>Remove to paper towels to drain, and serve hot.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/farm3.static.flickr.com\/2140\/2173766281_33ce591c80.jpg\" alt=\"\" \/><\/p>\n<p>Lay the croquetten on a slice of bread, slice open through the center and spread your choice of mustard over it all.<\/p>\n<p>Yummy!<\/p>\n<p>If you want to make lots, and freeze the extra, simply lay them on a cookie sheet in the freezer until firm, then slip them into a container or freezer bags to keep them fresh until you\u2019re ready to use them. I freeze mine into family size servings.
